Gelato vs. Ice Cream: What's the Difference?
Gelato and ice cream start from a similar place, but a few key differences make gelato its own thing. Gelato is churned more slowly, which whips in less air, so it's denser and silkier on the spoon. It also uses more milk and less cream, giving it a lighter body that lets the flavors come through.
Gelato is served a touch warmer than ice cream, too, which softens the texture and makes the flavors more vivid. That's why a scoop of artisan pistachio or stracciatella tastes so much more intense than its ice-cream counterpart.
When it's made in small batches with real ingredients — as the best Las Vegas gelato is — the difference is unmistakable from the first bite.
